WATERSHED GIN - OLD TOM STYLE

Our Old Tom Watershed Gin is a faithful reproduction of this historic spirit. We start with our regular Watershed Gin, and then we age it in our own rye barrels for a period of about six months. Becky then adds in about 10% sugar to sweeten it up. The result is a delicious, and oh-so drinkable spirit!

HOT HONEY RYE

When you take our beautiful, pot stilled 100% rye whisky, and you add three types of local Virginia honey (wildflower, clover, and buckwheat) and an infusion of chile peppers, you get something amazing.  Because we use real honey, the aroma and flavor of honey are dominant in this whisky, and the honey gives a very pleasant viscosity/mouth feel. 

ROUNDSTONE RYE - 92 PROOF

This whisky is the culmination of several years of planning.  "For a few years now, we've been putting whisky away for storage," remarked Becky Harris, Chief Distiller and President of Catoctin Creek Distilling Company.  "We pulled some of the more interesting barrels from the back of the warehouse and decided to release these at a higher proof:  a whisky specially curated for flavor, while still being remarkably smooth, as is our existing 80 proof Roundstone."

RABBLE ROUSER BOTTLED IN BOND RYE WHISKY

Distilled from 100% rye and bottled in bond, the Rabble Rouser differs from its cousin, Roundstone Rye, in that it is distilled at a lower proof, allowing lots of earthy goodness from the grain to come through in the spirit. Today, the whisky is aged for six years, making it among the oldest craft whiskey in the United States presently, and three times the legal age requirement for "straight rye whiskey."
