The Hayman family is the oldest gin-producing family in London, dating to 1863. Hayman's is the only traditional London gin producer whose flagship, traditional London Dry Gin has its primary emphasis on citrus, while still maintaining the high proof and spicy midpalate of classic Dry Gin. The defining characteristics of Hayman's Gin include use of three small copper-pot stills; 24-hour maceration of botanicals, for extra concentration; and the use of 10 classic botanicals.

Merging tradition and terroir, Provincia Patagonia gin elevates indigenous botanical ingredients to conjure a vivid sensory tribute to one of the world’s last wild places. Provincia employs 2 copper pot stills (one 400 L and one 600 L) fabricated by a master coppersmith near the distillery; botanicals are distilled separately or in groups through a combination of maceration and direct distillation, steam infusion, and cold distillation via rotary evaporator (Rotavap) for delicate botanicals like flowers and soft fruits

Bordiga Occitan (Italy) Gin, 84 proof

When the sea air from the Mediterranean meets the mountain air from the Alps, high concentrations of essential oils give unique and extraordinary aromatic properties to the juniper, which is hand foraged in the Occitan Alpine Valleys of Italy. Gin was first made by Bordiga in 1889, and this gin is made from the original Bordiga recipe. There are four main ingredients in this Italian gin which are angelica, cardamom, something secret, and of course juniper. 

Hendrick’s (Scotland) Gin, 88 proof

No other gin tastes like Hendrick's because no other gin is made like Hendrick's. They infuse the gin with the remarkable Bulgarian Rosa Damascena and specially selected cucumbers from the finest producers. Some might expect a more concentrated rosewater-cucumber profile, but it's relatively subtle, with just a hint of cucumber mingling with juniper in the aroma, and white pepper, citrus and floral notes on the lingering finish.

Empress 1908 (British Columbia) Indigo Gin, 85 proof

Distilled in copper-pot stills, Empress 1908 Gin contains eight signature botanicals, including exotic butterfly pea blossom, discovered in a tea blend served at the Empress Hotel in Victoria, B.C. These blossoms impart a warm herbal earthiness, soft texture, and deep indigo colour. 

Cocktails

Son of an Englishman Spritz

1 oz Hayman’s London Dry Gin

1 oz Bardouin Pastis

½ oz lemon juice

2 oz club soda

Combine the gin,pastis and lemon in a cocktail shaker with ice. Stir well. Strain it into an ice-filled glass and top with club soda

Colinas de Verano 

1 oz Gin Provincia 

1 oz El Bandarra Aperitif

1 oz Atxa Dry vermouth

2 dashes lavender bitters

Combine all ingredients in a cocktail shaker with ice. Shake until chilled. Strain it into an ‘up’ glass
