The newest release from Proof and Wood’s DC Collection, The Cabinet is an award-winning blend of straight bourbon and rye whiskeys distilled between 2014 and 2017 and bottled in 2023. The nose is nutty with toasted almonds and a touch of hazelnut…butterscotch, oak, a bit of dry earth, and a hint of grape. Citrus takes over on the palate, with clementine and mandarin orange peel providing an initially sweet, smooth ride. The finish adds yet another layer of flavor, thanks to the emergence of dark chocolate and espresso.
