Made from 4 grains, including 3 select specialty malts, Tennessee High Malt starts with an attemperated 7-day fermentation. This extended process highlights both the rich, high-malt character while also adding a nuanced, fruity complexity to the spirit. After fermentation, each batch is carefully distilled at low proofs in a custom 30ft. column still before being laid to age in two types of charred & toasted oak barrels. This combination of cooperage imparts a balanced, confection-rich character to the aged whiskey, while also harmonizing with its malty-rich character.

The Lindores Abbey Distillery has added to its Casks of Lindores series with this superb single malt which has been exclusively aged in shaved, toasted, re-charred red wine barriques – otherwise known as "STR" casks, if you fancy sounding fancy. While the first release in the range focussed on bourbon casks and the vanilla-rich notes they impart, this edition shows off a fruit-forward style from Lindores Abbey, with notes of damson, raisin, and plum all playing their part.

Noah’s Mill Genuine Kentucky Bourbon Whiskey

The initial taste reveals the crispness of the rye on the front of the tongue, which follows with vanilla and cream flavors. The Proof begins to show its nose midway through, with a good alcohol heat on the middle of the tongue with some notes of spicy cloves. Very heavy oak and tannins power through on the back end of this as the age becomes much more prevalent, rounding out the experience. It does become just a touch bitter on the back of the tongue, which indicates this distillation is probably at the maximum aging limit for the particular mix. Finish: Very long and satisfying. Though this is a 114 proof bourbon, it doesn’t feel like it.
