This bourbon is bottled at 88 proof, which is a nod to the 880 miles between WhistlePig's Vermont headquarters and its new Kentucky distillery. The bourbon undergoes a distinctive finishing process involving two types of toasted barrel heads made from Vermont-sourced wood:

Snout: A medium toast of Vermont oak.

Tail: A smoked and toasted maple wood.

During the aging process, the barrels are flipped 180 degrees to ensure the whiskey interacts with both barrel heads, allowing for a complex flavor extraction

This barrel of Piggyback bourbon is Vermont distilled and it's lovely - big, rich, oaky, bold bourbon. Aromas of ripe pear skin, roasted almonds, chrysanthemum and caramel corn drift out of the glass. Layers of flavor in this pour, with mint jelly, peaches and cream, nutmeg and dark chocolate sauce. A rich and chewy finish with cinnamon, herbes de Provence and more dark chocolate that lingers long after your glass is ready for a refill.

FarmStock Rye Crop No. 003 is the third release of the limited edition annual Triple Terroir Whiskey, mostly created from Vermont rye grain, distilled and proofed with local water, and aged in custom Vermont White Oak. This year's release is a historical step, the first ever majority WhistlePig Whiskey. Comprised of 52% of 3-year-old Rye Whiskey, blended with 31% 6-year aged whiskey and 17% 10 year aged whiskey from Alberta, Canada

Such a rich, balanced nose right out of the gate - punchy at its 114 proof. Sweet, sticky honey, warm old oak, bright apple-like acidity, lemon creme pie, pineapple. So many notes only grow more and more intense as it sits in the glass with this big brown sugar sweetness. 

The palate is bright and coating - lots of cherry pie filling, spiced apple, and tropical fruit cocktail all mixing with oaky brown sugar, chocolate pudding, and a subtly minty, peppery spice.

The finish is dense and spiced: mixing citrus spice, oak spice, and baking spice all together big and dry, yet still really balanced with a long long linger of oak and candied mint. 

A robust yet balanced aged rye.
