Barrell Batch #35 Bourbon

Barrell Bourbon Batch 035 is a blend of 6, 7, 8, and 13-year-old bourbons. A multi-mashbill blend of 6 and 7-year-old spicy and earthy, high-rye, high-proof, oak forward barrels was combined with a blend of 8-year-old softer, lower-proof barrels with concentrated notes of dark cherry and butterscotch. After mingling for two months, 13-year-old barrels with dominant fruit flavors were layered in. A portion of these barrels had more tropical fruit notes and the other portion showed more dried and candied fruit notes. The resulting bourbon is peppery and intriguing on the nose, and sweet and long on the finish

Barrell Cask Finish Series - Mizunara

Casks made from rare Mizunara hardwood are a true work of art. The wood is meticulously cut, and the barrels carefully raised due to the wood’s characteristics. Mizunara finishing imparts subtle notes of sandalwood, herbal spice, and coconut to bourbon, and precision is required to craft a harmonious blend. This cask finished bourbon was expertly blended using bourbons distilled from multiple mash bills and finished in Mizunara casks for one and a half years.

High Wire Jimmy Red Bourbon Peach Brandy Finish

Our flagship spirit, this bourbon is made from 100% Jimmy Red corn, a magenta-hued landrace grain grown for decades on James Island and nearly lost forever. For 9 years, we’ve worked with a team of researchers and farmers to rebuild a secure seed supply for the most flavorful whiskey corn we’ve ever tasted. Aged a minimum of two years in char 3.5 American oak barrels, this bourbon is best enjoyed in a proper whiskey glass neat or with perhaps one cube of ice.

This past winter, the distillery took a blend of their classic Jimmy Red Bourbon and filled their freshly dumped Peach Brandy casks to form what they call “a perfect marriage of two of (their) most beloved spirits.” Bottled at 95 proof, there are just over 350 bottles in stock.

Barrell Batch #4 Rye

10-year-old Indiana Rye barrels with notes of brown sugar and a touch of smoke had 5 and 6-year-old barrels layered in for fruit and spice character. 14-year-old Canadian barrels were added for their dry herbal notes. The result is fruit-forward rye with layers of depth.
